Ingredients

2 sweet potatoes
2 eggs
1 handful of olive leaves
1 leafy green salad
1 handful tomatoes
2 tbsp of olive oil
1 tbsp of cider vinegar
fresh basil leaves
salt, pepper

Directions

This simple healthy salad of baked potato makes a great alternative to mayonnaise-based versions.

Steps

Boil some water in a saucepan.

In the meantime, peel the sweet potatoes.

Cut the sweet potatoes into thick slices.

Now put the sweet potatoes into the hot water and let it cook for 10 min (you can also add eggs).

Prick the potatoes with a knife to make sure that the sweet potatoes are cooked well.

Run cold water over the sweet potatoes and cut them into pieces.

Next mix them with the salad, olives, tomatoes and eggs.

Add oil and vinegar, basil leaves and the seasonings to this and enjoy the taste!
