Ingredients

1 kg squids
150 g lardons
1 onion
2 shallots
2 garlic cloves
250 g tomato paste
1 thyme branch
1 laurel branch
3 tbsp olive oil
2 glasses of white wine
salt, pepper

Directions

A very old recipe that my mum used to cook to me when I was a child. Serve this recipe with some cauliflower or fresh seasonal vegetables.

Split the pouch of the squids lengthwise. Empty them and wash them carefully. Cut its tentacles and wash them as well.

Pat the squids and the tentacles dry. Now cut the squids into strips and the tentacles into sections.

Peel the onions, garlics and the shallots and chop them into pieces.

Heat oil in a pot. Put the lardons and the chopped onions, garlic and the shallots into the pot and fry.

Next, add the squid pieces and fry them as well.

Drizzle some white wine and add the tomato paste, the thyme, the laurel and the tarragon. Season with salt, pepper and paprika. Let it cook for 30 minutes.
