Ingredients

1 shoulder lamb
1 kg carrots
500 g turnip
250 g onions
4 garlic cloves
6 tomatos
1/2 glass olive oil
1 branch mint
salt, pepper

Directions

Lamb shoulder is quite a fatty cut, so wonderful for low, slow roasting. It’s a foolproof way of feeding a crowd because it nigh on impossible to overcook it.

Steps

Cut the shoulder of mutton pieces (or ask your butcher to prepare the meat by removing the fat). Salt the meat and put to brown in the pan with the olive oil.

Meanwhile, peel the carrots, onions and turnips and cut into slices and quartered.

Put tomatoes few seconds in boiling water, then remove to peel and crush coarsely.

When the meat is browned, remove the pieces of container and discard the onions, carrots and turnips in the cooking fat. Leave blondir few minutes over medium heat.

Add the puree of fresh tomatoes, the garlic mashed and flavored with chopped mint leaves.

Add salt and pepper and then add 1 liter of water and pieces of shoulder. Cover and simmer 1:30.

Pour into a large platter and serve at once.
