500 g of sea bass
1/2 glass of white wine
3 medium-sized tomatoes
thyme branch
1 lemon
basil leaves
2 tbsp olive oil
1 garlic clove

Directions

Traditional papillote takes time and requires origami-like folding. Here, we use foil to make a no-mess pouch; the fish becomes infused with the flavors of tomato, capers, garlic, and lemon.

Preheat the oven at 200 °C.

Empty the sea bass, clean it well and pat it dry.

Open the sea bass lengthwise to insert your herbs, olive oil and the white wine (optional).

Place the sea bass in a foil and wrap it.

Cut the tomatoes into two and place them on the bottom of
the dish.

Season the tomatoes according to your taste.

Sprinkle a little olive oil over the tomatoes.

Now place the sea bass (with its aluminium foil) in the dish.

Cook it in the oven at 200 °C.
