4 slice of raw foie gras
4 pears
2 tbsp honey
1 star anise
2 tbsp of pine nuts
salt, pepper

Sautéeing duck foie gras is not hard to do, but be careful; otherwise, you’ll end up with a puddle of very expensive melted fat.



Peel the pears, cut them into 3/4 big slices and remove the core, except on the upper part of the pear.


In a hot frying pan, put honey and heat it for 3/4 minutes to caramelize it. Then add the pears and fry it for 2 min with honey and let it cook for another 10 min.


In a very hot frying pan, cook the foies gras for 1 min on each side, then turn off the heat and leave it for 3 minutes in the frying pan before taking it out.


Season the foies gras with some salt and pepper as needed.


To decorate this preparation more, we advise you to rearrange the pears by placing foies gras pieces between each pear piece. Pour the rest of the honey and add pine nuts over the plate.
