Directions

This stuffed cabbage with salmon is the recipe of Danièle Mazet Delpeuch, the cook of former French President François Mitterrand. Her story inspired a movie called “Les saveurs du Palais”, with well-known actors Catherine Frot and Jean D’Ormesson.

Blanch the leaves and the center for 5-10 minutes in some salted boiling water (the leaves should soften but not too cooked for they will tear otherwise).

Meanwhile, cut the tomatoes into pieces.

Drain the leaves while running them over cold water to cool them.

Slice the onions and chop the garlic.

Mix tomatoes, olive oil, crushed garlic and the finely chopped onions in a salad bowl.

Wrap the salmon filets around the cabbage leaves and place them in a dish. Now add the tomato mixture around the cabbage bud. Sprinkle some oil on the stuffed cabbages.

Cook them in a steamer where you’ll have to add some water, or bake at 200 °C for 10 to 15 min.
