    In a frying pan, cook an onion cut into fine slices, 1 red pepper cut into strips, 2/3 carrots cut into small strips with 1 tbsp of olive oil on low heat for 10 min.

    Beat the eggs in a bowl with some cherry tomatoes and olives.

    Season this with garlic and basil.

    Now put the contents in the bowl into the frying pan and let it cook for a few minutes until the eggs become solid.

    Serve this mouthwatering dish accompanied with a green salad by embellishing it with a fresh sprig of parsley.
