This is my basic, go-to grilled chicken — perfect for a quick weeknight dinner or cookout — and so versatile.

Grate and squeeze the lemons into a bowl. Chop an onion, then herbs and add it to the lemon juice. Add pepper and salt according to your suitability.

Separate the preparation in two different bowls. In the bowl that will be used the marinade for the chicken, add some olive oil and the chopped ginger and whip it well. Now add the chicken, mix it well and let it marinate for 30 min.

In the second bowl, add the diced avocados and the mango. Mix them together and put it in the refrigerator.

Heat up the coconut oil in a frying pan and sear the chicken pieces over high heat (for approximately 3-6 min on each side according to the size of the pieces) until a beautiful golden color appears.
