The cooked ham and the lardon are saltered. If you eat paleo, your salt intake is low and you may only eat a little daily.

Steps

Blanche the cabbage for 3 to 4 minutes in some boiling water and let it cool.

Peel and cut all the vegetables into pieces.

Fill half of a cooking pot with water and add vegetables, salt,
pepper, thyme, laurel, along with the chicken stock into it.

Let it simmer for 1 hour.

Over very low heat, add the chopped lardon and the smoked ham.

Cook for another 15 min over very low heat.
