Ingredients

1 banana
4 eggs
50 g coconut floor
1 tbsp olive oil
100 ml coconut milk
1 tsp bicarbonate
100 g raspberries
100 g blackberries
marple syrip optional

Directions

These are paleo, vegan and gluten free. The banana here is the linchpin, so you won’t want to sub that out. But feel free to use whatever berries you have in season.

Steps

In a bowl, mix coconut flour, coconut oil, coconut milk and baking.

Break the eggs and put them in another bowl. Add to the above mixture.

Mash a ripe banana and add remaining ingredients.

Put everything in a blender to mix until a homogeneous mixture.

Bake in a pan like a crêpe.

Serve warm adding berries and maple syrup on pancakes.
